Beetroot Bloody Mary - amazing zing on a Saturday morning for this combo of: vodka, sherry, beetroot juice, red wine vinegar, house fermented chilli and celery salt. After one of those you feel ready to take on the Pigs head - no not with an apple stuck in mouth - it is in fact a delicate disc of distilled down pig - like amazing shredded bacon - sorry not doing justice to it - you must try!
Known as ployes 2 parts milk and 1 part buckwheat beat together and spoon on to a well buttered girdle. Serve immediately with butter and maple syrup

Spent yesterday walking the lines of trees checking for holes in tube , squirrels can nibble or tap not on properly and vacuum is weaker. I wore snow shoes so wouldn't slip but hard work walking hamstrings are feeling it today ,but beautiful if regimented walk. Saw first sap and drank from big tap like slightly sweet spring water , it takes 4 quarts of sap to make 1 quart

If I say so myself - just back from taking 24 hens on a fantastic food and drink walking tour and relaxing with an Arbikie gin - we did a tasting with Iain Stirling of Arbikie Gin in Joey D's amazing one off reconstructed sofas. Iain explained how Arbikie gin - pronounced Ar Bee Kee is made from potato vodka grown and distilled on their farm in Angus. The Barony did us proud with veggie haggis neeps and tatties for 24 then salads, marshmallows and prosecco, scones jam and cream for 24 to finish. It was great fun and the hens were great sports and wore pith helmets and got into the hunting eating ethos of Edinburgh Food Safari
