 Your Piece Oatcakes are made by hand in Fife from Scottish oats and go absolutely brilliantly with Iain Mellis artisan cheeses from their Stockbridge shop. Tuck into the Isle of Mull cheddar which has been aged on Mull for over 18 months with Trotter’s Hot Pepper Jelly, for a satisfying jolt to the tastebuds on a Your Piece oatcake.

Pea Green Boat Cheese Sablés, which are made in Leith, are gorgeous Parmesan cheese biscuits made with Scottish organic wheat. Warm them in a medium hot oven for 3-4 minutes and serve – easily passed off as your own – just remember to hide the packet!

I love taking guests into Armstrong’s of Stockbridge, a 100-year old traditional fishmonger, to see where Scottish salmon is marinated in Pickering’s gin, (distilled in Edinburgh) then slowly smoked over oak chips in the back of the shop. This hand-sliced gin-marinated smoked salmon is fantastic on its own, or serve or as a canape on an oatcake with the Edinburgh Fermentarium’s Fermented Figs. This local pickling company makes amazing kimchi and sauerkraut, but the Fermented Figs are inspired and are a perfect match for  cheeses and smoked fish.

Edinburgh and Lothian bees have been busy and The Edinburgh Honey Company make this lovely gingerbread spiced infused honey, using honey from 100 local hives.  I could sup this fudgy honey out of the jar: it’s also fabulous on oatcakes or on ice cream¬

Nicole Roberts, aka The Marshmallow Lady, has a wonderful range of marshmallows which she makes in her tiny Rodney Street shop. There is no shortage of shortbread makers in Edinburgh, but I love The Shortbread House’s stem ginger shortbread and I have seen and smelt it being made. The Coco Chocolate shop is a really popular safari stop, so I’m sharing with you some of my favourite flavours – also try melting Coco Chocolate in some hot milk and top with a marshmallow.
